Recipe for Geoff Harris's White Lightning Chicken Chili that was amazing at the fall meeting!!
Need:
One big rotisserie chicken (I get from Costco)
One yellow onion chopped
One jalapeño pepper chopped
2 T. olive oil
3 cups chicken broth
2 T. taco seasoning
Juice of one lime
3 cans White Northern beans
One whole garlic head
½ cup fresh chopped cilantro
First:
Roast garlic head (slice off the top of the garlic head and cover with a little olive oil and roast in 400 degree oven for 30 minutes) Remove cloves from head when cooled.
Next:
Take all meat off chicken and chunk
Next:
In a big soup pot, sauté onion and jalapeño in olive oil until carmely, add chicken broth, taco seasoning, lime juice
Next:
Mash (ONE) can of the beans in a bowl with the roasted garlic cloves (yes, use all cloves!) then add to pot along with the other 2 cans of beans and the chicken. Simmer for about 25 minutes.
Finish:
Right before serving, add the cilantro and stir.
